Baked Chicken and Peppers



Ingredients:

6-8 pieces of chicken rinsed
3 small Assorted Bell Peppers(green, red, orange,etc)seeded and cut into strips
Olive Oil(to taste)
Garlic Salt(to taste)
Fresh Ground Black Pepper(to taste)
Herbal Seasoning like Mrs. Dash(to taste)

Cooking Instructions:

-Sprinkle Olive Oil on Peppers and mix lightly with your hands.
-Layer Peppers in Baking Dish
-Add a few tablespoons of water just to barely coat the bottom of the pan
-Sprinkle Olive Oil and seasonings onto Chicken
-Mix well with hands making sure to get under the skin
-Place chicken on top of peppers and cover with foil
-Bake at 375 degrees for 35 minutes.
-Take foil off and turn chicken over.
-I typically pierce my chicken with a fork at this stage especially with big pieces. It allows the chicken to cook more evenly and makes a nice addition to the pan drippings!
-Bake 30-45 more minutes or until desired doneness.

Easy Skillet Chicken



Ingredients
Chicken pieces (4-8 pieces cut up-legs and thighs work great for this recipe)
Canola, Vegetable or Olive Oil
Garlic Salt (to taste)
Black Pepper (to taste)
½ cup of water or chicken stock
1 Tablespoon of minced Thyme and Parsley

Cooking Instructions
-Rinse the chicken in cold water.
-Season both sides of the chicken with the Garlic Salt,Black Pepper and Thyme and Parsley
-Coat the bottom of a skillet with the oil.
-Brown both sides of the chicken on medium heat.
-Add ½ cup of water or chicken stock to the skillet.
-Cover and cook on low for 45 minutes.

Barbecue Chicken Pizza

Ingredients:

3 boneless chicken breast halves, cooked and cubed
1 cup hickory flavored barbeque sauce
1 tablespoon honey
1 teaspoon molasses
1/3 cup brown sugar
1/2 bunch fresh cilantro, chopped
1 (12 inch) pre-baked pizza crust
1 cup smoked Gouda cheese, shredded
1 cup thinly sliced red onion

Preheat oven to 425 degrees F (220 degrees C). In a saucepan over medium high heat, combine chicken, barbeque sauce, honey, molasses, brown sugar and cilantro. Bring to a boil.

Spread chicken mixture evenly over pizza crust, and top with cheese and onions. Bake for 15 to 20 minutes, or until cheese is melted.

Tomato Chicken Parmesan

INGREDIENTS
2 eggs, beaten
1 cup grated Parmesan cheese
7 ounces seasoned bread crumbs
6 skinless, boneless chicken breast halves
1 tablespoon vegetable oil
12 ounces pasta sauce
6 slices Monterey Jack cheese


Preheat oven to 375 degrees F (190 degrees C). Pour beaten eggs into a shallow dish or bowl. In another shallow dish or bowl, mix together the grated Parmesan cheese and bread crumbs. Dip chicken breasts into beaten egg, then into bread crumb mixture to coat.

In a large skillet, heat oil over medium high heat. Add coated chicken and saute for about 8 to 10 minutes each side, or until chicken is cooked through and juices run clear. Pour tomato sauce into a lightly greased 9x13 inch baking dish. Add chicken, then place a slice of Monterey Jack cheese over each breast, and bake in the preheated oven for 20 minutes or until cheese is completely melted.

California Sherry Chicken

INGREDIENTS
4 skinless, boneless chicken breast halves
1/4 cup all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon olive oil
1/2 cup cooking sherry
1/2 cup chicken broth
1 clove garlic, minced
1/2 lemon
4 carrots
4 zucchini squashes, julienned



Place chicken in a resealable plastic bag with flour, salt, and pepper. Seal bag and shake to coat. Remove chicken from bag, shaking off excess flour. Heat oil in a large skillet over medium high heat. Brown chicken on each side for about 5 minutes, or until golden. Remove from skillet and set aside.

In same skillet combine sherry, broth, garlic and a squeeze of lemon and bring to a boil. Return chicken to skillet, reduce heat to low and simmer for 15 to 20 minutes, or until chicken is cooked through and no longer pink inside. In the meantime, saute carrots and zucchini in a separate medium skillet until they are tender. Add to simmering chicken and sauce and heat through before serving.
